Fall Recipe: Tortilla Soup

As the winter gets colder, there is nothing better than warm soup to feel more like fall. Curling up to watch a movie and enjoying a home-cooked meal is a great way to invite the changing weather and I have the perfect pairing. I enjoy tortilla soup and it reminds me a lot of growing up, so here is the recipe so you can enjoy it too.

Ingredients:

1 clove garlic

1/2 onion

3 cups chicken broth/stock

1 can tomato soup

1 cup water

1/2 cup milk

1 can hominy

1 package of taco seasoning

1 cup diced roasted chicken

Instructions:

Sauté garlic and onion until light brown and tender in a large pot. This takes about 10 minutes.

Add broth, tomato soup, water, milk, hominy, taco seasoning, and roasted chicken into to the pan.

Simmer for 20 minutes covered.

Serve soup into 4 bowls and let guest top soup with your favorite condiments.

Condiments include shredded cheese, hot sauce, sour cream, fresh avocado, diced tomatoes, diced onions, corn chips or tortilla chips, cilantro, and don’t forget fresh lime!
