Fall is here with full force in Dallas and the weather is getting colder just in time. My roommate, Taylor Mallalieu, family recipe is the perfect fall pumpkin cake to enjoy with your favorite Halloween movie. She made this recipe for all of our friends during our Saturday girls’ night. The cake is the perfect amount of pumpkin matched with cream cheese frosting.
She started by preheating the oven to 350 degrees. Then, Mallalieu greased the cake pan. We used butter and flour to do this, but cooking spray also works.
She then combined eggs, vegetable oil, sugar and a can of pumpkin purée and mixed it until smooth in a large bowl. After it was mixed, Mallalieu added all the dry ingredients to the same bowl. This includes flour, cinnamon, pumpkin pie spice, baking powder, baking soda and salt.
After Mallalieu added the batter to the pan, put it in the oven to bake for 35 minutes. The cake made our apartment smell amazing and we were all watching the movie “Goosebumps.” Once it came out of the oven, we let the cake cool for almost 2 hours. She then added the cream cheese frosting to the top of the cooled cake. The frosting includes cream cheese, powdered sugar, vanilla extract and butter.
The cake is especially better the day after baking, and reminds Mallalieu of her hometown. It is the perfect fall treat and I recommend making the cake to bring in the changing season!
