Recipe
Ingredients:
2 tablespoons olive oil
1 small yellow onion, diced
2 celery stalks, diced
2 large carrots, peeled and diced
3 garlic cloves
5 cups chicken bone broth
2 boneless skinless chicken breasts
1/2 cup Farro
3/4 teaspoon turmeric
1/2 teaspoon oregano
1/2 teaspoon thyme
1/4 teaspoon black pepper
Instructions:
In a large pot of dutch oven over medium heat sauté the diced onions, celery and carrots for about 5 minutes or until soft. Once soft add in the garlic and ginger?, sauté for 30 seconds to a minute until fragrant.
Stir in the turmeric until it coats the vegetables then add in the bone broth, oregano, thyme, black pepper, and salt
Add the chicken breasts and farro and bring the liquid to a simmer. Cover and cook for 15-20 minutes or until the chicken breasts are fully cooked through
Remove the cooked chicken breasts from the pot and shred it. Add the shredded chicken back into the pot.
Season with salt and pepper to taste. Serve and enjoy!
